Gail’s Stuffed Green Pepper Soup

 

Serves 4

1 lb. ground beef, browned and drained

2 cans tomato soup

2 (8 oz.) cans diced tomatoes

2 green peppers, chopped
1 onion, chopped

1 tbls. Italian seasoning

5.6 oz. pkg Spanish rice mix, uncooked

grated parmesan cheese for garnish

 

Combine all ingredients except rice mix and Parmesan cheese in a slow cooker. Cover and cook on low setting for 3-4 hrs. until peppers and onion are soft. Prepare rice mix as pkg. directs; stir into soup. Cover and cook on low for an additional hr. Serve with parmesan cheese sprinkled on top.

  1. I usually see recipes for this containing beef broth. Does the Spanish Rice mix add enough flavor that this recipe does not need it? It seems like a convenient replacement if that is the case.

    I think the packaged rice mix will have all the seasoning it needs. I suppose if you are real worried you could toss a cube of bullion in, but I don’t think it will be necessary.
