1/2 cup chopped celery
1/4 cup chopped onion
1/2 chopped green or red bell pepper
1 tablespoon grated horseradish root (optional)
2 tablespoons lemon juice
1 1/2 teaspoons sugar
1 teaspoon salt
1 teaspoon Worcestershire sauce
Tabasco sauce, to taste
Press mixture through a sieve. Return juice to slow cooker.
Cook on high for a half-hour. Add lemon juice, sugar, salt, Worcestershire sauce and Tabasco sauce; cook for 15 minutes. Chill.
