Serves 4 to 6.
3 to 4 chicken leg quarters
1 each green and yellow bell peppers, chopped
4 green onions, chopped
2 apples, peeled, cored, and chopped
1/4 cup soy sauce
1 apple, sliced, for garnish
1. Put leg quarters into slow cooker. Add bell peppers, onions, the 2 chopped apples and soy sauce.
2. Cook on Low 6 to 8 hours. Remove and serve with remaining apple, sliced, for edible garnish.
