Serves 4 to 6.
1 lb. chicken, either leg quarters, thighs or boneless, skinless chicken breasts
1 (8-oz.) pkg. fresh mushrooms
1 medium onion, sliced
3 carrots, peeled and sliced
6 cloves garlic, sliced
1 (14-1/2-oz.) can chicken broth
2 sausages (andouille preferred), sliced
Wild and long-grain rice mix, cooked
1. Place chicken, mushrooms, onion, carrots, garlic, chicken broth and sausages into slow cooker.
2. Cook on Low for 6 to 8 hours.
3. Cook wild rice. Remove chicken mixture with slotted spoon and top rice with chicken.
