2 pounds boneless pork (tenderloin, loin or country-style ribs), fat removed and cut into large chunks
*2 cups mojo criollo marinade
8 4-inch hoagie rolls
8 slices provolone or mozzarella cheese
Combine pork and marinade in slow cooker, cover and cook on low for 6 to 8 hours or on high for 4 to 6 hours. Remove meat and shred with two forks. Return to slow cooker and stir. Divide the meat among the rolls, top with a slice of the cheese and serve.
Makes 8 sandwiches.
