2 cups fresh basil leaves
2 tablespoons grated Romano cheese
1/2 cup grated Parmigiano Reggiano cheese
1/4 cup pine nuts
1/2 cup extra virgin olive oil
3 garlic cloves, pressed
3 tablespoons unsalted butter, softened
1 teaspoon salt
1 1/2 teaspoons black pepper
Combine all ingredients in food processor. Process until smooth. Refrigerate or freeze until ready to use.
Makes 1 cup.
