Coconut Rice Pudding
1 – 15 oz can coconut cream
4 cups whole milk
1/2 cup long-grain rice
Spray the interior of a slow-cooker with nonstick spray.
Add coconut cream and milk, and stir to blend.
Add rice and salt, turn heat to low and cook at least 6 hours. Stir the mixture, and cook 30 minutes more.
Don’t worry if some of the mixture sticks to the side of the cooker and browns, just stir that into the pudding. It adds a rich caramel flavor.
