I could have had a V-8

Serves: 6-10
4 pounds fresh tomatoes
1/2 cup chopped celery
1/4 cup chopped onion
1/2 chopped green or red bell pepper
1 tablespoon grated horseradish root (optional)
2 tablespoons lemon juice
1 1/2 teaspoons sugar
1 teaspoon salt
1 teaspoon Worcestershire sauce
Tabasco sauce, to taste
Chop tomatoes. Place tomatoes, celery, onion, bell pepper and horseradish root, if using, in slow cooker. Cover; cook on low 8-10 hours.

Press mixture through a sieve. Return juice to slow cooker.

Cook on high for a half-hour. Add lemon juice, sugar, salt, Worcestershire sauce and Tabasco sauce; cook for 15 minutes. Chill.
