Chicken for the Road (Chicken With Leek Potatoes)

Serves 4 to 6.

3 large potatoes, washed, unpeeled and sliced
1 to 2 lbs. boneless, skinless chicken breast halves or thighs
2 leeks, cleaned and sliced
1 (14-oz.) can chicken broth with roasted garlic
5 slices bacon, cooked and crumbled
1. Place sliced potatoes in bottom of slow cooker. Add in chicken and leeks.

2. Pour chicken broth over all. Cook on Low for 6 to 8 hours.

3. Remove from cooker and top with crumbled bacon.
