Coconut Chicken Bites

1 lb. chicken breats, cut into 2″ or 3″ pieces
1 cup flaked or shredded coconut
1/2 cup flour
1/2 tsp. salt
1/4 tsp. black pepper
1/4 tsp. garlic powder
1 egg, lightly beaten
1/3 cup margering, melted
apricot dipping sauce (optional)
Heat oven to 400 degrees. Mix flour, coconut, salt, pepper and garlic powder together. Dip chicken bites in egg then into the four mixture. Place bites onto a greased (you can use non-stick spray) cookie sheet or baking pan. Drizzle with melted butter. Bake approx. 25 minutes or until bites are browned and cooked through.
Turn once durning cooking. Service with a dipping sauce (optional).
