This is a use what you have type recipe. I fed 4 with leftovers. Adjust quantities to suit your family.
MJ’s Made Up Chicken, Potato and Corn Chowder
3 large red potatoes, diced, skin on ( you COULD peel them but why?)
2 cups chopped cooked chicken
1 can cream of chicken soup
1 can cream of corn
1 can chicken broth
1/2 to 1 onion chopped
garlic salt to taste
parsley to taste ( I used dry )
Layer the potatoes, onion, and chicken in the bottom of a greased crockpot ( I sprayed with Pam Olive Oil ). Mix remaining ingredients together and pour over the chicken, potatoes and onion. Cook on low 6 hours or until potatoes are done.
You could thicken this with a little cornstarch and water, but dh liked it as it was ( a little soupy )
