This is a recipe that I think is perfect to adapt to the crockpot!

1 Tablespoon chopped Onions
2 Tablespoon chopped Tomato
1 ounce fresh jalapeno (to taste)
Brisket (about 3 ounces per serving)
Cook brisket in oven at 275 for 5 to 6 hours. When brisket is cooked; tear up and shred meat. Fry green peppers, onions, tomatoes and brisket together. Add the two eggs and scramble together, salt and pepper to taste. Serve with flour tortillas, beans or fresh cheese.
