Serves 6 to 8.
3 green bell peppers, chopped
1 large onion, chopped
1 zucchini, quartered and sliced 1/4-inch thick
1 (14 1/2-oz.) can crushed tomatoes
1 (10-oz.) can diced tomatoes
1 (15-oz.) can garbanzo beans
1 (15-oz.) can pinto beans
1 (15-oz.) can black beans
1 1/2 tbls. red chili powder
1 tbl. garlic powder
1 tsp. oregano leaves
1/2 tsp. cumin
1. Cut peppers in half; remove seeds and chop.
2. Combine all ingredients into slow cooker. Cover; cook on Low for 8 hours or on High for 4 hours.
