Karen’s Taco Soup

Amount Measure Ingredient — Preparation Method

1 pound ground beef
1 onion — chopped
16 ounces diced tomatoes — (canned)
1 whole kernel corn — (16 ounces)
16 ounces red beans — (canned)
1 package taco seasoning
8 ounces tomato sauce
46 ounces tomato or V-8 juice
***WHEN SERVING***
Tortilla chips
Sour cream

Brown ground beef and onion in Dutch oven until no longer pink.
Pour in the canned vegetables without draining.
Add taco seasoning, tomato sauce, and tomato juice to achieve the desired thickness.
Simmer for at least 30 minutes.

To Freeze: Cool slightly. Pour into rigid plastic container, label and
freeze.

To Serve: Thaw in refrigerator overnight or microwave. Heat until hot Serve
with tortilla chips and sour cream.
