Chicken a la King Meal Packets

12 slices bacon — diced
1 1/2 cups onion — chopped
3 cans mushroom stems and pieces — reserve liquid
1 1/2 cups all-purpose flour
1 tablespoon salt
3/4 teaspoon pepper
1 1/2 quarts half and half
1 quart chicken broth
3 cups peas and carrots, frozen
1 1/2 quarts chicken — cooked and diced
24 biscuits — frozen
Dice the bacon and fry in pan, add mushrooms (reserving liquid) and onion.
Cook until onion is tender and bacon cooked. Add salt, pepper and flour,
stirring constantly until well mixed.
Remove from heat. Stir in half and half, chicken broth and reserved
mushroom liquid. Heat to a boil, stirring constantly for one minute. Add chicken
and still well. Stir in peas and carrots and allow to cool. Divide into
meal size portions freeze flat in Ziploc baggies.
Place the bag with the chicken mixture into a larger Ziploc bag and then
add 2 biscuits per serving.
