This chicken has quite the zing! Paired with Dill Lemon Rice for a flavorful meal
6 boneless, skinless chicken breasts
3 teaspoons dried thyme
3 teaspoons salt
1 garlic clove
1 cup lemon juice
Mix all the spices and lemon juice in a bag. Add Chicken breasts. If freezing, see directions below. Otherwise, marinate for several hours or overnight. Place in crock-pot for 4 – 6 hours on low. You may also bake or grill instead.
Freezing directions: Place in a freezer bag. The chicken will marinate while thawing.
Dill – Lemon Rice Mix
3 cups long grain rice, uncooked
3 teaspoons grated lemon peel
2 ½ teaspoons dill weed
1 teaspoon salt
2 tablespoons instant chicken bouillon
Combine all ingredients in a large bowl and blend well. Store in a cool dry place and use within 6 – 8 months.
Combine Dill – Lemon Rice mix, 4 cups cold water and 2 tablespoons butter or margarine in a medium saucepan. Bring to a boil over high heat. Cover and reduce heat. Simmer for 15 – 25 minutes until liquid is absorbed.
