HOT ROLL MIX

Today is Freezer Food Friday, hosted by Rachel at A Juggling Mums Food Blog, post a freezer meal recipe or idea and link it at her site. Here is a freezer meal recipe I blogged earlier this week, followed by a new recipe for Freezer Food Friday.

Heavenly Chicken

HOT ROLL MIX

5 lbs. (20 cups) all-purpose flour
1 1/4 cups sugar
4 teaspoons salt
1 cup non fat dry milk.

Mix it up and store in the freezer.

To make Rolls

2 tbs. dry active yeast
1 1/2 cups luke warm water
2 eggs beaten
1/4 cup vegetable oil
5 to 6 cups hot roll mix (I end up needing the 6 cups)
2 TBS butter melted

Dissolve yeast in water. After it dissolves add oil and beaten eggs. add the 5 to 6 cups of mix. Knead to smooth (or use a kitchen aid mixer) Grease bowl and let rise until doubled. Punch down and roll into large balls for hamburger buns, long rolls for hot dogs or smaller circles for rolls. Bake at 425…(or 350 if you like lightly brown and soft) Remove from baking sheet immediately and brush with melted butter.

Sandwich bread

To make bread loafs from this, increase water by 1/2 a cup and add 1 more cup of mix. Everything else is the same.
