Pasta with Chicken, Zucchini and Mushrooms in Quick Tomato Sauce

Makes 4 to 6 servings

1 zucchini, unpeeled, halved lengthwise and cut into ½-inch slices (about 2 cups)
4 ounces mushrooms, quartered
2 cups cubed cooked chicken breast
2 cups Quick Tomato Sauce (see below)
8 ounces (2½ cups) ziti, cooked according to package directions and drained
¼ teaspoon salt
Freshly ground pepper to taste
1 cup grated mozzarella cheese

Quick Tomato Sauce

Makes about 2 cups

1 can (15 ounces) tomato sauce
1 garlic clove, minced
½ teaspoon dried oregano
½ teaspoon dried basil
¼ teaspoon salt
Freshly ground pepper to taste


In a small saucepan over medium heat, combine all sauce ingredients. Simmer, uncovered, stirring occasionally, until flavors are blended, 5 to 10 minutes.

Preheat oven to 350 degrees.

Place zucchini and mushrooms in a lightly sprayed or oiled 2-quart casserole. Add chicken, tomato sauce, pasta, salt and pepper and mix well. Cover and bake until bubbly, about 40 minutes. Sprinkle with cheese and bake, uncovered, until cheese is melted, about 5 minutes longer.
