Spicy White Chicken Chili

Serves 6 to 8.

3 (15-oz.) cans Great Northern beans, undrained
1 (16-oz.) jar salsa
1 (4-oz.) can green chilies
4 boneless, skinless chicken breast halves, cut in bit-size pieces
1 cup chicken broth
2 tsps. ground cumin
2 tsps. chili powder
1 (8-oz.) pkg. shredded Monterey Jack cheese
1 (8-oz.) pkg. Colby Cheddar cheese

1. Put beans, salsa, chilies, chicken breasts, chicken broth, cumin and chili powder into slow cooker.

2. Cook on Low for 7 hours. Add in cheeses and cook for an additional hour. Stir and serve.

Note: A large slow cooker is needed for this recipe.

  6. I just tried this last weekend. I thought it sounded like something I could throw together for a full day of house renovations with no kitchen.

    It was perfect!

    Easy to make and delicious. The most difficult part was that I’d forgotten my can opener and had to use a Swiss Army Knife.

    I highly recommend this one!

  7. This was delicious. A friend had mentioned her version of this recipe so, I browned the chicken first in a little olive oil a couple cloves of garlic, 1/4 of a red onion and 1/4 cup of cilantro. Even if I hadn’t added the extra ingredients, it would have been delicious…and so easy.

    I definitely recommend this recipe!

    • No… you dice raw chicken breast… it will cook in the crockpot. I suppose you could do this with leftover chicken too.
