Chuck Wagon Casserole

This is a super recipe from Pampered Chef.

1/2 c. onion, chopped
1/2 c. green pepper, chopped
1 lb lean ground beef
1 can (15 1/2 oz) mild chili beans in sauce
3/4 c. BBQ sauce
1/2 tsp. salt
1 pkg (8 1/2oz) corn muffin mix
1 can (11oz) Mexican-style corn, drained.

Preheat oven to 400 degrees. Chop onion & bell pepper. Cook and stir ground beef, onion and bell pepper over medium heat 8-10 minutes or until beef is no longer pink: drain and stir in chili beans, BBQ sauce and salt. Bring to a boil and spoon into 9×9 pan or casserole dish. Prepare corn muffin mix according to package directions, stir in corn and spoon over meat mixture. Bake 30 minutes or until golden brown.

Yield: 6 servings.

  1. I like to use Ground Turkey instead of ground beef. I’ve had both variations and loved it either way. Great meal when you are entertaining too!
