Mom’s Famous Tortilla Casserole
This is a throw together recipe…… here is how I do it….
1 pound of Ground turkey
Onion, diced
1 small can sliced black olives, drained
Red or Green Taco Sauce
6-8 Flour Tortillas, cut up
1 pack of grated cheddar or Mexican blend cheese
Preheat oven to 350. Brown ground turkey ( or beef) with diced onion. Add one small can of sliced black olives and most of one bottle of red taco sauce ( mine says 12.5 oz ) saving some for the top and bottom of the casserole. Heat thoroughly. In a 8×8 greased casserole, spread a little sauce and add a layer of tortillas, meat and cheese. Repeat. Top layer should be tortillas and reserved sauce. Bake at 350 for 30 minutes. Top with cheese. Bake 5 minutes. Let set 5 minutes and serve.

I used to make something like this all the time. I didn’t use olives and I used tomato soup as the sauce. Great recipe!
